Recipe of the month: zucchini flower fritters

In summer, zucchini blossoms flood the markets of Nice. Light and delicate, they are perfect for a classic dish: golden and crispy fritters.

Ingredients (for 4 servings)

  • 12 fresh zucchini blossoms
  • 150 g all-purpose flour
  • 1 egg
  • Approximately 20 cl cold water (or beer)
  • Frying oil, salt

Instructions

  1. Prepare a smooth fritter batter by mixing flour, egg, and cold water. Season with salt and let rest for 30 minutes.
  2. Gently clean the blossoms and remove the pistils.
  3. Dip each blossom into the batter, then deep-fry in hot oil (180 °C) until golden brown.
  4. Drain on paper towels, season with salt, and serve immediately.

Tip

A very cold batter results in lighter fritters. Some people insert a small amount of brousse cheese inside the blossom before frying — a gourmet and very Niçois touch.
