In summer, zucchini blossoms flood the markets of Nice. Light and delicate, they are perfect for a classic dish: golden and crispy fritters.
Ingredients (for 4 servings)
- 12 fresh zucchini blossoms
- 150 g all-purpose flour
- 1 egg
- Approximately 20 cl cold water (or beer)
- Frying oil, salt
Instructions
- Prepare a smooth fritter batter by mixing flour, egg, and cold water. Season with salt and let rest for 30 minutes.
- Gently clean the blossoms and remove the pistils.
- Dip each blossom into the batter, then deep-fry in hot oil (180 °C) until golden brown.
- Drain on paper towels, season with salt, and serve immediately.
Tip
A very cold batter results in lighter fritters. Some people insert a small amount of brousse cheese inside the blossom before frying — a gourmet and very Niçois touch.
